Lentil Sausage Patties
A vegan take on a breakfast staple.

- 1 cup red lentils, cooked
- 1 small onion, diced
- 1 Granny Smith Apple, diced
- 3/4 cup rolled oats
- fresh sage
- 2 tsp poultry seasoning
- 2 tsp mushroom powder
- dash of cinnamon
Prepare your lentil boiling 2 cups to 1 cup of red lentils. Let simmer for 10-15 minutes or until water has dissolved.
Add diced onions to an oiled skillet on medium heat. Sautee your onions for 3-4 minutes. Add fresh sage and apples and cook for 3-4 minutes or until both apples and onions are soft. Remove the sage.
Add rolled oats to a food processor or blender and pulse until it is a flour like consistency.
Add lentils, sage onion/apple mix and,the remaining ingredients until the blender. Pulse until ingredients are combined and formed well.
Create 4-6 patties with the mixture. Skillet fry on medium high heat skillet until golden brown on both sides.
