Sports have never really been my thing. But I love the energy and the fellowship from watching a sporting event with other people. As a plant-based eater, it is challenging to prepare foods that match your diet but still feels like what everyone else is eating during the Big Game. If you’ve ever struggled to figure out what to bring to a party, these bites are sure to please a crowd.
Recently, I served these bites at a birthday party and the crowd went wild! The flavor is a bit spicy but delicious. Serve these with your favorite vegan dipping sauce to enjoy these bites.
The Buffalo Bites uses just a few ingredients to create a spicy bite similar to wings. If you’ve tried a cauliflower wing you’ll love these as well. Feel free to adjust the vegan-friendly buffalo sauce to your liking, if you can’t handle the hit.
Vegan Quinoa and Brown Rice Buffalo Bites
Equipment
- Food processor
- Baking sheet
Ingredients
- 1 cup cooked rice or cooked quinoa I created a blend of brown rice and quinoa. You can purchase a microwavable pouch.
- 2 cups white beans Equal to 1 can
- 1 shallot
- 3 garlic cloves
- 1/2 cup vegan-friendly buffalo sauce Or hot sauce
Instructions
- Preheat oven to 350 F.
- Add garlic cloves and shallot into the food processor. Pulse until both are in small pieces.
- Add white beans and cooked quinoa/rice into processor. Pulse until all ingredients are incorporated but not mushy!
- Scoop the mixture using a spoon or cookie spoon, if available, spoon the mixture onto a lined baking sheet. Depending on the sizes you like you should be able to have at least 10-12 bites.
- Bake in oven for 15-20 minutes, flipping halfway through. Enjoy with your favorite vegan ranch.
