Breakfast as a vegan can be a bit challenging. Sure oatmeal or a smoothie can be vegan, but the Standard American Diet for breakfast is animal-based heavy. What can a vegan eat with bacon and eggs being at the forefront? Yes, there are plant-based subs for bacon, sausage, and eggs too. And I do enjoy those. However, a whole food plant-based option you can make at home will be cheaper and likely healthier for you. Let me introduce you to Lentil Sausage Patties.

Why lentils?

Lentils might be overlooked in an American diet, but these legumes pack a punch. Firstly, lentils are very inexpensive. They are packed with B vitamins, magnesium, zinc, and potassium. Lentils are an excellent meat alternative as they are made up of more than 25% protein.

Red lentils, which are used in this recipe cook quickly and have a “mushier” consistency allowing for a well-formed patty. I’ve tried to create this recipe with green lentils, not the same result. 

What’s in the patties?

The ingredients in this patty, are whole food plant based. The simple ingredients create a wholesome mix. The sweetness of the apples combine with the onion and sage is a flavor bomb.

Lentil Sausage Patties

A vegan take on a breakfast staple.

Equipment

  • Blender
  • Skillet

Ingredients
  

  • 1 cup red lentils, cooked
  • 1 small onion, diced
  • 1 Granny Smith Apple, diced
  • 3/4 cup rolled oats
  • fresh sage
  • 2 tsp poultry seasoning
  • 2 tsp mushroom powder
  • dash of cinnamon

Instructions
 

  • Prepare your lentil boiling 2 cups to 1 cup of red lentils. Let simmer for 10-15 minutes or until water has dissolved.
  • Add diced onions to an oiled skillet on medium heat. Sautee your onions for 3-4 minutes. Add fresh sage and apples and cook for 3-4 minutes or until both apples and onions are soft. Remove the sage.
  • Add rolled oats to a food processor or blender and pulse until it is a flour like consistency.
  • Add lentils, sage onion/apple mix and,the remaining ingredients until the blender. Pulse until ingredients are combined and formed well.
  • Create 4-6 patties with the mixture. Skillet fry on medium high heat skillet until golden brown on both sides.
