Vegan Starbucks Copycat Chickpea Bites

I enjoy trying something from a restaurant or fast food place and veganizing the recipe at home. This vegan copycat of Starbucks Chickpea Bites doesn’t disappoint. Luckily the Starbucks Chickpea Bites are vegan, but if you don’t feel like spending the money on Starbucks, this recipe will help you make the bites at home. 

Why Chickpeas?

The versatility of chickpeas never stops amazing me. I can make a variety of items from chickpeas such as crab cakes, brownies, burgers, and so much more. Chickpeas can be transformed into several tasty bites because of their mild flavor and changeable texture.

 I love to serve my bites just like does with mashed avocado, salt, and a little splash of lime juice. Starbucks also serves its bites with dried food, nuts, and baby carrots.

My chickpea bites are wonderful to travel with whether it’s on a plane or just in a lunch bag. I took these bites on my recent trip to Hawaii. There was no problem getting these bites through TSA for me. I did have avocado mash in a prepackaged 3oz sealed container.  

About the Copycat Recipe

The binder for this recipe is aquafaba, which is the liquid from the chickpeas. The liquid is an easy substitute as you will have to do something with the can of chickpea and its liquid. You will need to drain the liquid so why not save it for something else? Generally speaking, three tablespoons of aquafaba equals one egg.

These bites are suitable for kids and adults alike.  You can of course adjust the spices if you feel paprika is too spicy for you or your child. Because the ingredients are quite simple and can be eaten hot or cold, it’s a great item to bring to an office potluck. (Brownie points if you portion size this with storebought avocado mash.)

For the Vegan Copycat Starbucks Chickpea Bites

The ingredients for this recipe are quite simple and you may have all these items already in your pantry! (YAY!). 

You’ll need:

A can of chickpeas plus the liquid

Panko breadcrumbs

Sesame oil

Garlic powder

Onion powder

Cumin

Paprika

S&P

Instructions:

All the above ingredients need to be blended in your food processor until the mixture forms together. Afterward, you’ll create the disc to bake. Bake for 425F for 20-25 minutes, flipping halfway.

Chickpea Bites

These chickpea bites will have you bypassing your favorite coffee spot and head to the kitchen. The cumin and sesame adds a savory flavor that you'll love.

Equipment

  • Food processor
  • Baking sheet

Ingredients
  

  • 1 can chickpeas, drained but reserve the liquid
  • 3 tbsp aquafaba
  • 1/2 cup panko breadcrumbs
  • 2 tsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and Pepper to taste

Instructions
 

  • Preheat your oven to 425 F and prepare your baking sheet with whatever liner you like.
  • Add all ingredients to your food processor. Combine until smooth but has formed together. The mixture should stick together at this point.
  • Using a spoon or cookie scoop, scoop the mixture into a small disc (about ½ inch thick). Place each disc on a lined baking sheet. Bake for 10 minutes, flip each disc and bake for an additional 10 minutes.
  • Serve with guacamole.
